As we know,
some prefer the spiny lobster to the New England lobster; and along
with native seafood, we created the Southern Clambake. We use just
the tail of the spiny lobster, since they have no claws, as their
northern cousins do.
In place of 'steamer' clams, local clams, shrimp or other seafood
that is more native to Florida can be substituted. We are very
flexible in the Southern Clambake, and will work with you to achieve
what you feel is a good balance of choices for your special occasion.
As for the rest of the clambake, the foods are pretty much the same
as the New England Clambake, in that there is an assortment of meats
and vegetables. The fish can also be of a more native variety. As
for the condiments, we offer all the hot drawn butter needed, in addition
to salt, pepper and anything else one could want. Yes, bibs too!
